Get your potato fix this week at CU’s Seasonal Table event

Whether they are in fry or tot form, baked or roasted, potatoes are a staple in many of our favorite meals. For February’s Seasonal Table event, stop by the Center for Community (C4C) Dining Center this week to try a variety of potato-themed dishes.

This week’s menu

The organic potatoes used in this month’s special menu items are locally sourced from . This family-owned and operated farm is based 50 miles north of Denver and has been growing organic potatoes since 2006.

Seasonal Table dishes will be served during lunch at the C4C Dining Center.

  • Tuesday, Feb. 25: Potato Soup (contains gluten, milk, wheat, pork)
  • Wednesday, Feb. 26: Purple Potato Pierogi with Warm Roasted Corn Relish (contains gluten, milk, wheat)
  • Thursday, Feb. 27: Tacos de Papa (contains milk)
  • Kosher (Feb. 24–27): Picadillo de Papa
