Portion size: 1/4 pound of pasta per serving

Why they submitted this recipe: My entire family loves this pasta dish. It is so easy to make, and turns out in under 30 minutes. This can be made as is, or protein can be added to make more of a complete meal (white beans, sautéed shrimp, chicken or salmon). (We did not invent this recipe, just perfected it and since I know it by heart, it was easy for me to share)

Gochujang Noodles

Ingredients

  • 1 pound spaghetti
  • 6 tablespoons of butter
  • 1/3 cup finely chopped garlic (8-12 cloves)
  • 1/4 cup of sherry vinegar
  • 1/4 cup of gochujang paste
  • 1/4 cup of honey
  • 1/4 cup of chopped scallions
  • salt/pepper to taste

Directions

  1. Cook spaghetti in salted boiling water by following the directions on the package.
  2. Save one cup of the pasta water prior to draining, after draining, return cooked pasta to pot.
  3. While the pasta is cooking melt 4 tablespoons of butter over medium heat.
  4. In a frying pan or small skillet, add garlic, season with salt and pepper. Cook garlic until soft, about 2-4 minutes, stirring constantly - don't let the garlic brown.
  5. Stir in Honey, Vinegar and Gochujang paste, bring to a low simmer over medium/high heat.
  6. Maintaining a simmer, cook, stirring constantly, until the sauce reduces about 4 minutes, sauce should be thick, but pourable, remove from heat and wait until pasta is ready.
  7. Add sauce and remaining 2 tablespoons of butter to the pasta, toss to cover.
  8. Use pasta water sparingly if pasta sauce seems too thick.
  9. Use tongs to place pasta on a platter, cover with chopped scallions and ENJOY !
